Bourke, Wanaaring, Tibooburra, Cameron's Corner, Innamincka, Cordillo Downs, Birdsville.....4 days minimum.... Bitumen to Bourke, then the rest is dirt !

Through Bourke/Innamincka would be shortest way. Alternatives are Windora, Birdsville, or Broken Hill, Peterborough, Marree, Birdsville.

Chris - go slightly north of west bearing 292 degrees and distance 1448km. Somebody mentioned Peterborough and Maree - That's a heck of a long way around!!! Bearing Sydney to Peterborough is 220 degrees that's 72 degrees off course. Just go west.
