Hi, any idea how they work?? If there is a dead short I'm guessing they will just remain open constantly.

I've just bought a cheap bi-metalic one to fuse the supply for an electric brake controller. I've noticed other threads suggesting that magnetic circuit breakers are better, but I'm assuming the bi-metalic ones merely go open circuit when they heat up (due to the short) and then close again when they cool down. If the short is still there they go open again and so on.
